Palmento Costanzo: Mount Etna at the Center, Between Tradition and Contemporary Vision

Etna offers no shortcuts. Etna is not a region that lends itself easily to interpretation. It is a living, ever-changing ecosystem where viticulture is never routine, but a constant engagement with nature. Here, the vines sink their roots into deep, layered volcanic soils, rich in energy. Altitudes often exceed 700–800 meters, temperature fluctuations are marked, winds shape the vineyards, and light has a distinct impact on ripening.

In this context, making wine means taking on a responsibility: not to impose a style, but to strike a balance.

Palmento Costanzo is moving precisely in this direction. Without forcing the issue. Without unnecessary embellishments. With a consistency that, over time, becomes a source of value. The winery’s name itself is already a statement of identity. The palmento represents one of the most authentic expressions of Etna’s winemaking culture: lava-stone structures used for crushing grapes, a symbol of a millennia-old agricultural tradition.

As far back as ancient Greece, the vineyards on Mount Etna enjoyed ideal growing conditions. Over time, this region has fostered a deep connection between humanity and nature, built on respect, observation, and adaptation. Palmento Costanzo embraces this legacy and reinterprets it in a contemporary way. It is not about preserving the past; it is about allowing it to evolve.

One of the most interesting aspects of the project is the focus on the vineyard plots. On Mount Etna, these plots are not merely geographical boundaries, but true microcosms. The soil, exposure, elevation, and climatic conditions vary. And with them, the wine changes. The winery interprets this complexity with care and precision. Each plot is observed, respected, and valued for what it is. Uniformity is not sought. Authenticity is sought.

At the helm of the project is Mimmo Costanzo, alongside his wife Valeria. A discreet yet decisive presence, reflected in every decision the winery makes—from vineyard management to the approach in the cellar. Theirs is a project that grows naturally, grounded in a clear vision and consistent effort. Their production philosophy is straightforward: intervene as little as possible to let the terroir shine through. In the vineyard, this means working in harmony with the environment. In the cellar, it means guiding the wine without altering its identity. The result is never contrived. It is a direct consequence of the vineyard.
